Healthy quinoa pizza

Okay so when I tried making this for the first time last week, I was convinced it was going to be a huge failure. However it ended up tasting amazing. I found the recipe on an instagram account but I can't seem to find the account anymore, if I do then I'll add it to this post. (I've also tweaked it a little because I couldn't find all of the ingredients in my cupboard.)






Ingredients

BASE

150g quinoa (approx)
2 eggs
2 tbsp olive oil
A handful of basil (fresh) or 2 tbsp dried basil
1/2 tbsp baking powder
A handful of shredded mozzarella cheese
Salt & pepper to season

TOPPINGS

You can choose your own toppings, here's what I used...

Tomato puree
Cherry tomatoes
Pesto
Handful of cheddar cheese
Shredded mozzarella cheese (you can use as much as you like)



Method

1. Preheat oven to 200 (fan oven) or 220 (electric oven)

2. Cook the quinoa

3. Whisk eggs, olive oil, basil, salt and pepper together in a bowl

4. Add the cooked quinoa and mozzarella and mix well

5. Spread mixture onto a baking sheet (in whatever shape you fancy)

6. Bake base for 15 - 20 minutes (or until it starts to look golden brown)

7. Add toppings of your choice and bake for another 5 minutes

8. ENJOY



Tips

Some (i.e. mine) packets of quinoa don't say how long it needs to be cooked for - it's 15 minutes

When you spread the mixture onto the baking sheet, don't do it too thick or it won't cook properly

Make sure the middle is cooked or it will turn soggy and fall apart

Obviously if you're putting meat on your pizza, cook the meat first
